[...] The case studies were used to build a framework for analyzing and understanding the role of government, industry and NGO’s in the process of moving from food to health. [...] Define the gaps, the steps on the path to market and the characteristics of the final product. [...] To answer that question, we begin by examining the interactions between food and health and then identify the policy options and industry strategies that can change the nature of these interactions to improve health and opportunities for industry. [...] Figure 2 identifies the broad areas where food and health policy and industry strategy can affect the economic success of the industry and the health of Canadians.
